Hot Chocolate Mix

I make hot chocolate when the temperature dips during winter. For the last two years we have had winter linger around longer than usual. It was when I was mixing up the ingredients that I wondered if it would be possible to create the mix and store it. That way when needed you boil a tablespoon of mixture in milk and you have hot chocolate!

I did not come up with this recipe. I found it on SmittenKitchen. I changed the proportions and the kind of chocolate used but followed the base recipe. Next time you decide to pick up a ready made hot chocolate mix, think again. It is really easy to make the mix at home.

You will need
1/4 cup cocoa powder
2 tbsp. chocolate shavings from a 75% cocoa brick
1 1/2 tsp. cornstarch
1/4 cup sugar
a few drops vanilla extract
a pinch of salt

Combine all the ingredients in a mixing bowl using a fork. Store in an air tight container for up to a month.
