Cheese and Scallion Scones

Scones are one of the easiest biscuits you can make. Just put all the ingredients together and bake. They need no preparation and use can pretty much use whatever you have in your pantry. They are perfect to put together at the last minute. I had no plans of making these scones today. But I got busy and before I knew it the morning had flown by. It was almost noon and I had nothing for lunch. Scones and soup makes a great winter brunch. And with the winter refusing to give way to spring, soup and scones is what I went with.


Scones can be made sweet or savory. I already have a savory scone here made with zucchini and tomatoes. I had planned on making a sweet scone but the need to get lunch on the table got me trying another savory scone. The sweet scone is on my list and I will have it on the space soon. Until then here is another savory scone.

You will need
50 gm whole wheat flour
70 gm all purpose flour
2 tbsp. cold butter, chopped into pieces
1/2 tbsp. baking powder
1 /2 tsp. salt
1/2 tsp. ground cayenne pepper (adjust to taste)
1/4 cup grated sharp cheddar cheese (I used Cabot)
2-3 scallions, white and green, chopped
30 gm milk
1 egg
1/2 tsp. Dijon mustard

Preheat oven to 375 F. Add the ingredients in the order given to a large mixing bowl. Combine to form a dough that just holds together. Transfer to a flat floured surface and shape into a rectangle.


Cut into two squared and then diagonally into wedges. Transfer the wedges to a baking sheet covered in parchment paper.


Bake for 15-20 minutes or until the scones are brown.


Scones taste best hot out of the oven.
